Twice Baked Spaghetti Squash 

You can add meatballs to this or serve it as a vegetarian meal or side ! Change up the sauces, cheeses and herbs ! 

Cut your spaghetti squash in half and scoop out seeds.
Bake it at 350degrees for about half an hour or until tender when you poke it with a fork.

Use a fork to scrape at the insides and it will come apart just like spaghetti strands. If you've never made spaghetti squash this will be a very nice "aha !" moment. 

Healthy and delicious

Mix in about 2tbs of your favourite marinara sauce and top it with grated cheese. I used mozzarella this time but you can use whatever you have on hand.

Bake it again until it is bubbly and then sprinkle it with some fresh herbs.
